We have a winner for our 2nd Annual Recipe Contest! Take a look at the beautiful eggplant recipe sent in by one of our readers and TGL Facebook group members!

You may remember we had an article a while back about lathera, those classic Greek dishes that feature olive oil. This recipe is just such a one - healthy, olive-oil based and vegetarian (even vegan if you leave off the feta). It can definitely be a full meal, but I would also consider it as a side dish or even meze. Why not? Eggplant is a wonderfully versatile thing!
